WHAT IS FONIO

Fonio is a super grain and is grown mainly in West Africa. It is incredibly nutritious with more iron, protein, fiber, and vitamins that the regular rice.   Fonio has a rich, nutty, earthy flavor, with a texture that resembles couscous. It is grounded into flour and can be used to make bread, porridge, and cookies.

Fonio is an excellent substitute for white and brown rice and is great for those who are gluten sensitive.

FONIO AND ZACCHINI SQUASH VEGI BOWL (Gluten-Free, Nut-Free)

INGREDIENTS

1 cup cooked fonio

2 cups raw  zucchini squash (chopped in small pieces)

1 yellow bell pepper (finely chopped)

1  cup cilantro (finely chopped)

3 tsp lime juice

1 tsp dill

1 tsp oregano

1 red onion (finely chopped)

1 shallot (finely chopped)

Salt to taste

2 tbsp avocado oil

¼ tsp cayenne pepper

¾  cup chopped tomatoes

DIRECTIONS

In a medium-size bowl, place the hot cooked fonio and set aside.

Heat a Cast Iron saucepan over medium heat, add oil, pepper, shallot, red onion, dill, & salt. Sautee for 3-4 minutes, then add the squash and cook for another 4 minutes.

Add the cooked fonio and all the other ingredients & mix well.

Garnish with parsley or cilantro. Serve while hot.
