GLUTEN-FREE, VEGAN, ALKALINE CHICKPEA & WAKAME FRITTERS
INGREDIENTS
¾ cup of wakame (seaweed)
3 tbsp lemon juice
1 tbsp chia seed meal
2 cup chickpea flour
½ tsp coriander
1 tbsp turmeric
¼ tsp sage
¼ cup organic cilantro
Pinch of cayenne pepper
½ cup organic chopped scallion
1 cup alkaline or filtered warm water
4 tbsp grapeseed oil
3 organic chopped, bell peppers
Sea salt to taste
Extra oil for griddle
DIRECTIONS
Place wakame in your food processor and pulse until fine.
In a small bowl, place warm water. Add chia meal and mix well. Set aside.
Remove from processor and place in a medium-size bowl. Add all other ingredients and mix well.
Place 2 tbsp of grapeseed oil onto a stovetop griddle or in your skillet over medium heat.
Using a small spoon, drop one spoonful at a time on to the griddle and cook each side for 2-3 minutes, or until brown.
Drain on paper towel and garnish with cilantro and red peppers. Serve hot with Bajan Cou-Cou (See recipe in cookbook).
GLUTEN-FREE, VEGAN, ALKALINE SAVORY CHICKPEA WAFFLES
INGREDIENTS
1 1/2 cups organic chickpea flour
1/2 cup quinoa flour
¼ sea salt or to taste
2 cups organic hemp milk
3 tbsp grapeseed oil
1 heaped tsp turmeric powder
2 tbsp chia seed meal + ¼ cup warm water
2 tbsp organic lemon juice
Extra grapeseed oil for greasing waffle iron
Cherry tomatoes and chopped lettuce to garnish
AVACADO SAUCE
1 small ripe avocado
2 tbsp lemon juice
¼ cup water
Salt to taste
2 tbsp finely chopped cilantro
1/2 tsp onion powder
Pinch cayenne pepper
2 tbsp avocado oil
DIRECTIONS
In a small bowl, mix chia meal and warm water. Set aside for 1 minute.
Sift dry ingredients three times. (This helps to make the waffle lighter).
Place the dry ingredients in an electric mixer. Add all the other ingredients and whisk for 1-2 minutes. Don’t over whisk the batter. Allow batter to sit for 5 minutes. While the batter is sitting, heat waffle iron to medium heat. Grease the waffle iron thoroughly at the beginning and between each set of waffles.
Pour on about 1/3 cup of the batter into hot waffle iron, and cook according to manufacturer’s instructions. Remove waffles from the waffle iron, garnish and serve with
DIRECTIONS FOR SAUCE
Place all the ingredients in the blender and blend until smooth and creamy. Pour some of the sauce on top of waffles and garnish with cherry tomatoes and kale. Bon Appetit!
